The proven Kälte-Rudi cooking kettles are ideal for cooking, cook & serve, and cook & hold applications.
As an alternative to cooking, cook & serve, and cook & hold, the use of cook & chill technology is becoming increasingly important in production processes in bakeries, confectioneries, kitchens, and in communal catering, etc.
This means that the products are cooked and then rapidly cooled in the same kettle. With an uninterrupted cold chain, the products can be stored for up to five days without any loss of quality and with a delay in the aging process.
